Appetizer The rich flavor of new potatoes blended with the richness of Kumamoto milk. According to the attendant who served the dish, bouillon from Hakata Ichiban Dori is added here, and the soup is very impressive, packed with flavor, richness, and umami. The sea urchin is hidden in the center of the soup. As the sea urchin dissolves, the composition of the flavor changes, so it is best to savor it slowly. After all, it is three hours between Yufuin and Hakata. Fish Dishes Surrounded by the sea, Kyushu is known for its fresh seafood such as shrimp, squid, and mussels, and their flavor stands out. Perhaps to capture this flavor, the rice produced in Nagasaki Prefecture is cooked hard, leaving the rice with a firm texture. The saffron that holds the paella together is actually domestically and locally produced. Eighty percent of the domestic saffron is produced in Taketa City, Oita Prefecture, and they use the saffron produced at “Nanatsumori Agriculture” in the city. Japanese saffron is highly regarded even overseas, and there are only a few places where you can taste it as a dish. Meat Dishes The Mitsuse chicken, whose parents are French red chickens, is widely known as a brand chicken of Saga Prefecture. Mitsuse chicken is raised more slowly than broiler chicken, which is shipped in about 40 to 50 days, and takes about 80 days to grow, giving it a rich flavor with just the right amount of chewiness. The chicken used in Aru Train is from Yokowo Chicken in Tosu City, Saga Prefecture, and its rich flavor is as good as the acidity and richness of the tomato sauce. Even the zucchini melts into the flavor, creating a highly satisfying dish. …… Aru Train’s course is truly on par with ordinary (non-running) restaurants. The Oita River, which flows through Yufu City in Oita Prefecture, empties into Oita Bay, while the Kuju River in Kokonoe Town, which crosses the watershed, flows into the Ariake Sea via the Chikugo River. The Kuju River, which can be seen from the train on the section within Kokonoe Town, is particularly impressive with its cliffs and virgin forests that stretch approximately 2 km along both banks of the river in a hairpin curve. In autumn, the river is covered in autumn leaves, but the wild summer scenery with abundant water is just as good. Also on display is the collection of the Hara Model Railroad Museum, which was the catalyst for the revival of the “Aru” train. After the main dish comes the sweets! Main Sweets Mangoes from Miyazaki Prefecture are topped with an Okinawan pineapple-based sauce. From the welcome drink to the final sweet, the meticulously calculated course meal is a treat to admire. The train stops for a few minutes at Chikugo Yoshii Station for a train change, and we are allowed to get off at the platform.
