ANA will offer a new light meal menu, “Vegan Curry with Fruits and Spices,” on some international first and business class routes from September 1.
The recipe is supervised by Daigo, a long-established restaurant that has received two Michelin stars in the Michelin Guide Tokyo for 16 consecutive years. The curry is made with only domestically grown vegetables and fruits, and features a deep flavor that makes full use of the goodness of the ingredients.
The menu contains no animal ingredients, chemical seasonings, preservatives, refined sugar, or flour, and is safe for passengers with different dietary habits to enjoy.
Yusuke Nomura, the fourth-generation head chef of Daigo, says, “We arrived at this dish by making many improvements based on the curry that was originally served at the restaurant as a dainty meal. We have utilized the concept of “subtraction” in vegetarian cuisine that we have cultivated over the years,” says Yusuke Nomura.
Unlike most rouxes, which use sugar, ketchup, and fat, “Fruit and Spice Aromatic Vegan Curry” does not add any unnecessary ingredients, but instead uses candied onions and apples to bring out the sweetness and flavor. The rich aroma of cinnamon, cardamom, and other spices gives the curry a Japanese flavor that is both plant-based and satisfying.
Chef Nomura said, “It is not that vegetarian cuisine is vegan because it is made with only vegetables, but it is important to have the three minds (Daishin, Kishin, and Meishin), which are the teachings of the Buddha. Even if it takes a lot of time and effort, we have tried to develop it with a positive attitude (joyful heart), abandoning stereotypes of what it must be like (great heart) and with the kindness to adapt it to the age and constitution of the people who eat it (the “Mere Old Man’s heart”).
