The Ritz-Carlton, Tokyo (9-7-1 Akasaka, Minato-ku, Tokyo) opened a French restaurant, Héritage by Kei Kobayashi, supervised by Michelin three-star chef Kei Kobayashi, on January 29.
At this restaurant on the 45th floor, Mr. Kobayashi himself will supervise everything from the food and service to the ingredients, utensils, and spatial design, aiming to create a restaurant where all customers can enjoy cuisine that satisfies their hearts and minds. The name of the restaurant is derived from the French word “Héritage,” meaning “heritage or inheritance,” with the hope that the restaurant will serve as a place where people can become interested in French cuisine as they pass on the “heritage (French cuisine)” created by the French to the next generation.
The chef de cuisine will be Teruki Murashima. Mr. Murashima has been working with Mr. Kobayashi since Azure Forty-Five was launched in August 2023, and will deliver Kobayashi’s culinary worldview while updating traditional orthodox French cuisine in a modern way.
